I need some burger buns to go with veggies burgers I’m making; so they have to be easy. I find this recipe on the King Arthur Flour site, one of the most reliable sources for baked recipes. They call them beautiful burger buns; I call them easy burger buns in view of the conditions of current day life with Covid.
Here are my choices: place an order ahead of time at a local baker for curbside delivery or to bake my own. I choose the later because it is far easier and also less risky. I don’t even have to step outside of the house!
Besides the usual flour, water, salt and yeast for any bread, there are two more ingredients: egg and sugar. These are staple items in the pantry that I make sure they are stocked all the time. Yes, I’m risk averse in this Covid season. That gives me the peace of mind!
In fact, when I saw that flour was in short supply in the local supermarket, I started ordering 50-lb bag of bread flour from restaurant wholesalers. They have adequate supply; only consumer-size 5-lb bags are in short supply until the millers are able to shift their production process.
This recipe lives up to its reputation: it’s beautiful, easy and everything you want in a burger bun. The buns rise tall, soft, yet firm enough to support the patties and fillers stacked between the slices.
Easy Burger Buns
Ingredients
- Buns
- 3/4 to 1 cup (170g to 227g) lukewarm water*
- 2 tablespoons (28g) butter, at room temperature
- 1 large egg
- 3 1/2 cups (418g) King Arthur Unbleached All-Purpose Flour
- 1/4 cup (50g) sugar
- 1 1/4 teaspoons salt
- 1 tablespoon instant yeast
- *For best results (a smooth, slightly soft dough), use the smaller amount of water in summer (or in a humid environment), the greater amount in winter (or in a dry climate); and something in between the rest of the time.
- Topping
- 3 tablespoons (43g) melted butter
Instructions
Mix and knead all of the dough ingredients — by hand, mixer, or bread machine — to make a soft, smooth dough.
Cover the dough, and let it rise for 1 to 2 hours, or until it's nearly doubled in bulk.
Gently deflate the dough, and divide it into 8 pieces. Shape each piece into a round ball; flatten to about 3" across. Place the buns on a lightly greased or parchment-lined baking sheet, cover, and let rise for about an hour, until noticeably puffy.
Brush the buns with about half of the melted butter.
Bake the buns in a preheated 375°F oven for 15 to 18 minutes, until golden. Remove them from the oven, and brush with the remaining melted butter. This will give the buns a satiny, buttery crust.
Cool the buns on a rack.
