The green goddess sipper, soup or shots remind me of gazpacho, except it’s green rather than red. The green tone comes from the demi-goddess dressing (more later), cucumber, zucchini and a handful of fresh herbs. I use what’s growing in my herb patch: fennel, mint, basil, and parsley. I like to think of these as shots in a small glass — like the ones they serve you in restaurants between courses to refresh your palate.
Dorie in Everyday Dorie uses a demi-goddess dressing. The reason for the name “demi” is because it’s made with buttermilk and yogurt rather than the usual mayonnaise for the real thing. Therefore much lighter to turn into a soup or a palate cleanser.
To make demi-goddess dressing, blend all the ingredients: buttermilk, yogurt, white balsamic vinegar, lemon juice, salt, cucumber, avocado, garlic, herbs and scallions in the blender (Vitamix) until smooth. Taste for salt and add white pepper, if you like. This dressing is low in fat. Therefore, it’s a light yet creamy and it’s wonderful with potatoes, greens or grilled meat. In other words, it can go anywhere where you need something bright and refreshing, especially in the summer.
Using the demi-goddess dressing as a base, dial up the flavors with more buttermilk, greens (cucumber, zucchini, fresh herbs) and acidity (lemon juice and vinegar). You transform the dressing into something that serves as a sipper, soup or shots — whatever you want it to be. Top it with a dollop of yogurt and some herbs. That provides instant hydration; I can’t resist taking a sip. It’s tangy and herby! Haha, not yet. Dorie says you need to chill the soup for at least 4 hours before serving.
