Roast salmon with asparagus at the same time at 400°F for 10-12 minutes

When I’m cooking for one for a weekday meal that’d check all the boxes for nutrition and deliciousness, this is one recipe. You don’t only feel good about what you eat, the meal is also very easy to prepare. You need to get a piece of organically farmed or wild salmon, assuming that you have on hand brown sugar and mustard in the pantry. Then start cooking.

Besides using less than a handful of ingredients, I was intrigued by how widely received this recipe is by the New York Times’ readers. The intersection of popular interest, taste and ease of preparation can be a fruitful area to explore.

This recipe is a keeper and requires very little time and techniques to execute perfectly. In fact, you may not even need a recipe. It’s simple enough to make the marinade/glaze, by varying the amount of brown sugar and mustard to suit your taste for sweetness and spiciness. I use a cast iron skillet, preheated in a 400°F oven. Put the salmon on the greased pan, skin side down, and place it in the oven. Slather more glaze on the salmon, if you need it.

Oven time is about 10-12 minutes, depending on the thickness of the fish. This is exactly the time frame necessary to get asparagus roasted in the oven. So, for cooked greens, I reach for asparagus. This is the quickest, easiest as well as the BESTest meal I’ve had recently. A no brainer! Now I’m on the hunt for similar straightforward recipes which compromise nothing. I’m a happy camper!

Roasted Salmon Glazed With Brown Sugar and Mustard

Ingredients

  • Salmon fillets, preferably wild or farmed organically
  • Dijon mustard
  • Brown sugar
  • Salt and black pepper

Instructions

Heat your oven to 400 degrees.

Make a mixture of Dijon mustard and brown sugar to the degree of spicy-sweetness that pleases you. Salt and pepper the salmon fillets.

Place the salmon fillets skin-side down on a lightly oiled, foil-lined baking sheet. Slather the tops of the fillets with the mustard and brown sugar glaze and slide them into the top half of your oven. Roast for about 12 minutes, then serve.
