This is one sheet-pan and 10-ingredients cooking at its best. Dorie in Everyday Dorie gives us a perfect and quick recipe for a weekday dinner. The protein is chicken. Other ingredients include baby potatoes and mushrooms. The flavorings come from common pantry staples: onions (or shallots), garlic and balsamic vinegar. Additionally, there are the fresh thyme and rosemary. In short, I can’t think of a more effortless way in delivering a delicious meal than this sheet-pan balsamic chicken recipe.
I’m hardpressed to find ways to improve the recipe even if I have more time and ingredients to play with. So I won’t bother to do so. The recipe, as written, is perfection; it stands on its own.
Dorie says to roast the chicken together with the other ingredients for 40 minutes to 1 hour at 450°F. Yes, everything in one sheet-pan and they all go into the oven at once. No marinade beforehand. Just apply salt, pepper, olive oil and balsamic vinegar to the ingredients; and toss all of them together. It doesn’t get much easier.
Since I use a convection oven, I lower the temperature to 425°F. Even at the lower temperature, the chicken pieces brown fairly rapidly. Considering that oven works differently, I’d be on standby and be ready to lower the temperature before the chicken chars prematurely. Baby potatoes in halves take about 40 minutes to roast properly. Therefore, the alternative is to put a foil over the sheet-pan. Have fun!
