We are fortunately that we don’t have too many days of triple-digit heat in the New York area. But the ongoing heat wave, together with the air quality alert, require a host of coping strategies. I have tried to limit the time for outdoor activities. Meanwhile, inside temperature has been turned down. What’s more? Constant hydration is key. Something cool and delicious like a tomato and berry gazpacho is welcoming and—just what I need.
Here comes a curved ball: I love the gazpacho better in the blender than the final mix. There is nothing to do with the flavor. As it turns out, the darker brick red is somewhat off-putting. I’d love the gazpacho if the color is more inviting.
The gazpacho base is primarily the combination of cherry tomatoes and strawberries. They are both sweet and delightful on their own. Besides, there are other lovely ingredients in the blend: scallions, mint, basil, ginger, lime, vinegar, harissa and olive oil. It’s all so right—on paper. But, for some reasons, the color is wrong. Maybe basil is the culprit due to oxidation. Use less? I tried to fix it with more tomatoes, but the die was cast. Well, so much that I can’t control!

August 11, 2023 at 8:36 amIt’s funny, mine was also a weird colour but it was more orangey-pink than yours. guess it depends on the fruits used. Mine looked like strawberry smoothies! But they tasted amazing!
